Ideas for CHEESE
One of my favorite breakfast foods is a broccoli and cheese omlet; problem is, my favorite cheese is white american cheese. I do not eat any processed foods except for one slice of cheese per week, and I always feel so quilty. Does any one have any suggestions on a cheese that tastes similar and is NOT processed. Thanks

I tend to use shredded cheddar or mozzarella in my omelets. You can get away with using less this way and still get the satisfaction of eating real cheese. About 2 Tbsp. should do the trick for a standard sized omelet. Less if you use more flavorful cheeses like parmesan or crumbled feta. I like Sargento but read through the ingredients to see which works best for you. The less artificial ingredients the better.
