Leftover Turkey
Do you have any leftover turkey? What do you plan on making with it? I made a turkey salad sandwich for my husband's lunch today.

We are still in a house full of family and more expected today... Breakfast included potato pancakes made with leftover mashed taters and lunch will be a buffet of everything from yesterday.

Left over turkey
Since I am from New Mexico I can't live without the green chile.
I make green chile turkey enchilandas with pinto beans(another staple we New Mexicans can't be without. Like jj I use my leftover mashed potatoes for potatoe pancakes.
