Salty and Sweet
Made oatmeal today and added a little brown sugar...then I read the directions and realized I did not add the small amt of salt required. Added the salt and it made the oatmeal taste sweeter without adding more sugar.....WHY??????

Salt brings out more flavor.

Sometimes I use only salt and skip the sugar all together on my porridge!

pinch of salt
I add a pinch of salt to many sweet recipes because one property of salt is that used in the right proportion it enhances the flavors of the other ingredients in the recipe. Be careful though because adding too much will have the opposite effect and ruin the dish.
