Apricot - Basil
Bake boneless, skinless chicken breast with a mixture of apricot jam and fresh chopped basil basted on top. 375 degress for about 45 minutes or until done. Season with pepper.

Grilled Chicken Kabobs
You need chicken, red onion, olive oil, pineapple juice, Italian dressing mix
marinate chicken in 1 cup olive oil, 1 cup pineapple juice and dressing mix
cut onion into pieces
add a strip of chicken to BBQ skewer and then a slice of onion, continue adding until the skewer is full
Put skewer onto the grill until chicken is cooked

I like making chicken and yellow rice and using vegetables.

Chicken Tandoori!
Nice and healthy and packed with flavor!

For 4:

4 boneless, skinless chicken breasts
1 c. plain fat-free yoghurt
1 Tbsp. sweet paprika
1 Tbsp. peeled, minced fresh ginger root
1 garlic clove peeled and minced
2 tsp. curry powder (red, yellow or green)
1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. turmeric
scant pinch sea salt (or to taste)
1/4 tsp. freshly ground pepper
1/2 c. coarsely chopped cilantro leaves

1. Combine yoghurt with seasonings and spices **except cilantro** in zip-lock freezer bag.
2. Divide yoghurt in half, saving back 1/2 c.
3. Pop in the chicken, squeeze out air, seal. Turn or flop chicken around to coat with the yoghurt marinade. Refrigerate overnight, turning once before going to bed.

Pre-heat oven to 450F/225C.

4. Spray rack of roasting pan with non-stick spray.
5. Remove chicken from marinade, discard bagged marinade.
6. Put chicken to pan. Halfway through cooking (15 min. or so), brush set aside marinade on chicken. Turn, marinade on opposite side. Return to oven.
7. Bake in total, 25 - 30 mins.
8. Serve and garnish with the coarsely chopped cilantro.
