In a medium sauce pan, bring 1 cup of salted water to a boil. Add 3 tablespoons of quick grits. Reduced to low heat and cover. Cook for 5 minutes. Add 1 tablespoon of Parmesan cheese, salt, and black pepper. Stir well. Allow to thicken for a minute.

Meanwhile, in a medium skillet, heat margarine and garlic over medium-high heat. Add shrimp, onions, and celery. Stir well to coat. Add hot sauce and lemon juice. Season with black pepper, oregano, and parsley. Cook for 5 to 7 minutes.

Pour grits onto plate. Top with shrimp mix. Sprinkle dish with Parmesan cheese.
