Break eggs into bowl
Wisk in salt and pepper until a little frothy
Add oil to medium-high pan. Follow with beaten eggs
Occasionally scrape eggs from side letting uncooked egg fill in around the gaps.
When about half the liquid has cooked away, add any ingredients you might like. Place entire pan into oven a few inches under broiler.
Continue cooking until all liquid has cooked away and eggs have puffed up. Pull out with oven mitt, and fold omelette onto plate.
