Directions:  
Saute chopped veggies, except potatoes, in olive oil.
Saute cut up chicken
Add water, potatoes, salt, pepper, chicken boullion to taste
Simmer until veggies are done.

This soup can have as many or as little vegetables in it as you want. I leave out the potatoes for myself, but when I make it for others, I also add corn and beans, as well as the potatoes. Serve with Grands if you're not on a diet.
