Directions:  
Steak should be in 2 pieces. Season each generously with salt & pepper.
Heat oil in skillet (preferably cast iron) until very hot. Lay in steaks and brown each side for about 2 minutes. Add butter and swirl it around. Using a spoon, scoop the melted butter over the tops of the steak, basting continuously. Cook for about 2 minutes, to get them medium rare. Set aside on a cutting board to rest. Wipe out skillet, and add a little more oil over medium heat. Add onion and mushrooms and stir until caramelized (browned).
Slice top off the bread loaf, and scoop out insides. Insert one steak. Then layer the cheddar, onions & mushrooms, spinach,bacon, Swiss cheese, and finally the second steak. Cover with the top of the loaf. Wrap all in foil and refridgerate, placing a heavy weight on top to compress. Leave for at least 5 hours. Heat oven to 250º. Remove foil from loaf and bake for 20 minutes. Slice into wedges and enjoy!
