Preheat the oven to 350 degrees. Lightly grease a small baking dish. Place chicken thighs in baking dish and place in oven. Cook until done all the way through. Remove from oven and allow to cool so that it can be handled.

Mix remaining ingredients in a large bowl. First, whisk together mayo salt and pepper. Then stir in the grapes, walnuts, celery and scallions. When chicken is cool enough to handle, cut into bite sized pieces and add to mixture.
