In a small saucepan over medium high heat- bring your apple cider to a boil, whisking every so often until it's reduced by half. About 10-12 minutes. Cool completely. (If you don't have spiced apple cider add the nutmeg allspice cloves and cinnamon to the apple juice while it's boiling).

In a large bowl whisk together flour, brown sugar, baking soda, baking powder, salt. (And add your spices if you didn't put them in the apple juice already).

In a separate bowl whisk your eggs with the (cooled) melted butter and (cooled) cider reduction. Once combined, slowly pour your wet ingredients into your dry, and mix just until the dough comes together. Your dough will be sticky, so refrigerate for about 30 minutes to and hour, or until it's easier to handle and cut.

Roll your dough to about 1/2 inch thick onto a floured surface ad cut with your doughnut cutter.

in a dutch oven bring your oil to 325 F, don't overfill your pot.

Fry the donuts a few at a time until golden brown, about a minute to a minute and a half on each side.

Place the cooked donuts on a paper towel lined sheet pan.
