Preheat oven to 350 degrees F. Season pork with 1/4 teaspoon salt, 1/4 teaspoon sage, and pepper. In a lightly oiled skillet, brown pork on both sides; reserve drippings. Place chops in a baking dish. Arrange apples on pork. Pour molasses over apples. Sprinkle drippings in the skillet with flour. Cook and stir until brown. Slowly add water and stir. Bring to a boil. Stir in vinegar, 1/2 teaspoon salt and raisins. Pour into baking dish. Cover and bake 1 hour.
