For salad, break vemicelli nto quarters. Cook according to package directions. Drain and rinse under cold running water. place vermicelli in large bowl and set aside.

Cut carrots and zucchini into juliene strips. Cut strips into 2-inch pieces. Chop bell pepper and slice green onions. Cut turkey into thin pieces, 2 inches long. Add vegetables and turkey to vermicelli.

For dressing, combie oil, vinegar, soy sauce, sugar and ground red pepper. Peel gingerroot; finely chop. Add gingerrroot anc garlice pressed to bowl. Mix well, pour dressing over slalad; toss. Cover and regrigerae at least 1 hour to allow floavors to blend. Spoo salad into serving bowl
