Preheat oven to 350F. Coat pie plate with olive oil cooking spray. Chop cooked asparagus into bite-size pieces. (I roast extra asparagus with my dinner the night before) Arrange mushrooms, asparagus, and cheese (crumbled) on bottom of pie plate. In separate bowl, whisk together the whole eggs, then add the egg substitute. Pour over veggies. Cook for 15 minutes, or until set.
