Description: Ritz cracker and panko bread crumbs baked on buttermilk soaked chicken breasts.

pound chicken breasts thin, cut into strips

soak chicken in buttermilk in a ziplock bag or lidded container for 24-36 hours. This makes the chicken very tender.

Blend crackers and panko crumbs very fine in a food processor or blender.

Place crumbs in another zip bag. Shake off excess buttermilk off chicken and toss in bread crumb bag to coat thoroughly.

Preheat oven to

Bake on baking sheet sprayed with cooking spray. Spritz chicken strips with spray as well to prevent sticking.

Bake 20-25 minutes until done.
