Pre-heat oven to 350
Mix egg replacer as directed
Pat chicken dry
dip in egg replacer
dredge in breadcrumb mix
lay on wire rack
bake in oven for 15 min (on rack)
saute onions, green peppers and garlic until onions are opaque
add sauce, simmer
remove chicken from oven and layer in casserole dish
pour sauce over top and bake until chicken is done.
