Clean potato and prick with fork many times.

Bake in 400 degree oven for 40-50 minutes or until done. Let cool slightly.

Combine beans, tomato sauce and taco seasoing mix in a sauce pan. Simmer for 15 minutes. Set aside.

Steam chopped broccoli florets, corn and chopped red pepper until tender.

Cut potato lengthwise about halfway through. Squeeze ends to make center pop out. Loosen potato with a fork.

Sprinkle with shredded mozzarella cheese. Combine cottage cheese and chopped cilantro.

Top with bean mixture, steamed vegetables and cottage cheese mixture.
