Directions:  
Chop and mince all vegetables finely.
Add oil to small pan and heat. Add onions and garlic. Cook 2-3 minutes. Add dry rice and mix thoroughly. Cook, stirring frequently until rice grains begin to brown.
Add mushrooms. Stir in and add chicken stock.
Add salt and pepper to taste.
Allow mixture to come to a simmer. Cover and reduce heat to low. Cook 30-40 minutes until all liquid is absorbed.
