Directions:

Slice flank steak and put in bowl; add soy sauce, corn starch, sherry, and sugar; stir until well-mixed. Set aside.

Cut broccoli into bite sized pieces, s/b about 4 cups.

Heat 1 Tblsp. oil in a wok over high heat until the oil is hot but not smoking. Add the broccoli and stir for about 30 seconds. Stir in the water, reduce heat to med., and cover pan. Continue cooking (few minutes) untl broccoli is tender-crisp. Remove the pan and spread broccoli out on a plate.

With the heat still on the wok, pour the remaining 2 Tblsp. oil in and add ginger root and garlic, stir a few seconds until fragrant, then add beef to pan.Stir until the meat is almost done, about 2 minutes.

Return broccoli to pan and mix thoroughly.
