For the chicken rub:
Combine all the ingredients together and use for the chicken. You can store extra rub in an airtight container for up to 6 months

For the chicken
Preheat oven at 400F.
Rub the chicken and its cavity down with oil. Season chicken with rub, remember to season the cavity. This recipe calls for a can of beer. A 12 oz can, but you only 6 oz of the beer. Take a couple of big swigs from the beer and set the chicken ontop of the can. Place the chicken in the center of a roasting pan and set in 400F oven for 30 minutes. Reduce temperature to 325 for an additional 90 minutes or until internal temperature has reached 165F. Once finished, cover LOOSELY with foil and let rest for 10 minutes.
