Directions:  
Saute peeled and shredded beets in 1 Tb oil for 3 minutes. Stir in vinegar. Bring salt, dill, beets, potatoes, carrots, cabbage, and parsley to boil in 8 C water. Saute onion in 1 Tb oil until tender. Add flour. Wisk into soup. Reduce heat, cover, and simmer until vegetables are tender. Add tomatoes. Blend in food processor.
