In a large bowl , mix all ingredients except blue cheese. Divide beef mixture in 4 sections.

Take approximately 2/3 of a single section and form in a burger patty. Use your thumb to from a deep imprint in the middle of the patty. Fill imprint with 1/4 of cheese.

Take remaining 1/3 of the beef mixture from that single section to cover the blue cheese filled imprint. Flatten around the edges to ensure that beef stays together and cheese does not leak out.

Repeat this process to form 4 burger patties.

Place on grill and cook. Sandwich patty between two buns and top with extra blue cheese if desired.
