Saute onion and celery in olive oil until just tender.
Dissolve miso in 1 cup vegetable broth.
Add miso/vegetable broth mixture to saute pan and warm.
Place bread cubes in large bowl and pour onion mixture over cubes, stirring to distribute moisture.
Add apple and cranberries and stir.
Add remaining vegetable broth until stuffing is as moist but not wet.
Place in baking dish or stuff into meat.
Bake at 350 degrees for 45 minutes.
