Coat a nonstick baking sheet with cooking spray

Pound pork chops to 1/4-inch thickness

On a plate, combine flour, salt and pepper.

In a shallow bowl, beat egg and add milk and mustard

Place panko bread crumbs on another plate

Dip chops in flour mixture (shake off excess), then egg, then both sides in panko.

Place chops on prepared baking sheet; lightly coat with olive oil cooking spray

Bake 8 minutes each side. Can finish by spraying with extra cooking spray and broiling for a couple extra minutes for additional crispiness.
