Saute garlic and onions in a pan with spray oil

Add diced cauliflower 'rice'

Add soy sauce and balsamic to veggies and saute until browned.

Make space in the middle of the pan and pour egg whites.

When eggs are nearly cooked, mix in with veggies.

Create space in the middle of the pan again and add ground beef. Cook and chop beef with spatula.

When almost brown, mix beef into veggies.

Add pumpkin, mix and simmer on low heat.

Add salt and more soy sauce to taste and top with a dallop of sour cream.
