Mix marinade ingredients together in a large resealable bag. Add chicken and vegetables (cut into large, bite-size chunks) and let marinade 1 hour or as long as overnight, turning bag and moving vegetables around occasionally.

Remove chicken and veggies from marinade and place on a cookie sheet sprayed with a non-stick spray. Discard marinade.

Roast in oven at 375 degrees F for 20-30 minutes or until chicken is cooked thoroughly. When meat is done, season to taste and serve.
