In a large skillet, heat butter over medium-high heat. Add squash, stirring occasionally, cook 16 minutes or until tender.

Add chicken broth, water, brown sugar, and cook until liquid has evaporated., about 6 minutes. Season with salt and pepper.

I love butternut and acorn squash. This sounds like a great dish. Pumpkin is also a good side dish that I enjoy. After seeding and peeling I cut into cubes and boil as a potato, season with butter, salt and pepper.

Yes, it is peeled. I don't use it often, but if I remember correctly you'll want to discard the pithy seeded material in the center as well.
