Directions:  
Preheat oven to 350 F. Grease and flour two 9 inch pans. Sift together flour, baking soda, baking powder, cinnamon, and salt.

In a large bowl, cream butter, white sugar, brown sugar until light and fluffy. Beat in eggs one at a time, then vanilla. Beat in flour mixture. Stir in carrots, pineapple, chopped nuts, coconut.

Pour batter into pans. Bake in preheated oven for about 40 to 60 minutes, or until a toothpick inserted in center comes out clean. Allow to cool before cutting.
