Preheat oven to 350 degrees. Crush graham crackers and spread evenly over the bottom of lightly sprayed 8 - 9 inch pie pan.
Beat cream cheese with Splenda and vanilla until well blended, about five minutes. Add eggs and blend.
Bake for 30-35 minutes until center is almost set. Cool, then refrigerate overnight. Cut into 8 wedges and serve with topping (optional).
