Brush eggplant slices with olive oil. Place on a baking sheet. Bake for 8 minutes at 400 degrees. Flip eggplant; bake for 7 more minutes. Cool on a wire rack.
Spray 2 10-ounce ramekins with cooking spray. Place one slice in each cup. Top with 2 tablespoons of sauce and 2 tablespoons of mozzarella. Repeat layers twice. Top with Parmesan cheese. Bake for 25 minutes at 350 degrees.
