Directions:  
Heat oil in large kettle, add minced or chopped garlic cloves and heat until garlic “sings”. Do not have heat too high or you will burn the garlic. Add chopped onion and chopped bell peppers. Cook 2-3 minutes until they soften. Add chopped or pureed tomatoes and 2 cups of water with 3 chicken boullion cubes. Add 3-4 T chili powder (to your liking). Simmer 10 minutes. Add diced or pulled chicken and black beans (drained) and 1-2 T red pepper flakes (if you like it spicy). Simmer 20-30 minutes (the longer you simmer, the more the chicken falls apart and “makes” the chili). Sprinkle with fresh cilantro or light shredded cheese.
