Directions:

Quickly stir-fry chicken in dry wok until it has reached desired doneness. Remove from wok into separate bowl.

Heat 2 tsp sesame oil in wok. Add rice, garlic, and ginger. Stir-fry until rice is heated through.

Stir peas and carrots into rice mixture.

Push rice mixture to the edges of the wok creating a well-like space in the center. Add egg whites to this space and scramble there until firm. Stir into rice mixture.

Add chicken to the rice mixture in the wok. Toss in 2 tbs of soy sauce. Stir-fry for 60 sec. Serve.
