Directions:

prepare the leftover chicken - add some oil (or non-stick spray) to a fry pan and saute chopped onion, then add the chicken to warm it. Set it aside. Break the eggs into a bowl and beat them to mix.

in your favorite omlette pan, add the oil, warm and add the beaten eggs. Season with salt and pepper lightly.

when the eggs are no longer liquid, add to 1/2 of the area (reserving the other half to fold over, the warmed chicken and the shredded cheese

allow the cheese to begin melting and fold over the egg area that is unstacked.

cut in half, enjoy for 2 meals.
