Chop the onion and carrot, and mince the garlic gloves.
In a large saucepan over low heat, cook the chicken and onion in the oil for about 10 minutes, or until the onion is golden brown. Add the garlic and cook for 1 minute.
Add the stock, beans and carrots. Bring to a boil. Add the corn and tomatoes (with juice). Cook for 15 minutes.
