Ingredients:  Makes 7 servings

16  ounces
32  ounces
1-1/4  cups
1  tablespoon
1/4  cup

1.Brown sausage (cut into 1/4" slices) in Dutch oven approx. 3 minutes
2.Add chopped celery, onion and bell pepper and saute' 6-8 minutes
3.Stir in chopped chicken, broth, rice and cajun seasoning and bring to a boil
4.Reduce to a simmer, cover and cook until rice is done and liquid is absorbed (about 45 minutes)
5.Remove from heat and let stand for 10-15 minutes before serving
6.Garnish with fresh parsley, if desired
