Sautee garlic and onions in oil. Add chicken and cooked until no longer pink in color. Add soy sauce, sherry and water. Boil until tender. Add vegetables and cook in medium heat. Mix cornstarch with a little water and add to mixture to thicken sauce. Serve with rice.
