Cook Chicken in 2 cups of salted water in crock pot on low 5 hrs. Take out and Shred meat.
Combine chicken in large pot with chicken broth. (Can use broth from crock Pot)
Stir in the Soup Base, tomatoes, drained and rinsed beans, pureed chipotle and any other seasoning you would like. Simmer for 30 minutes.
Serve with sour cream if desired. (be sure to add those calories)
