Cover tenderloins in salt, pepper, and chipotle seasoning. In an oven safe pan, sear them in 2 tbsp olive oil, 2-3 minutes on each side (x 4 sides). Cover and bake for 20 minutes.

Meanwhile, saute the onions, peppers, and garlic in 2 tbsp olive oil with paprika, red pepper flakes, chili powder, salt.

Combine avocado, cilantro, cider vinegar, salt and pepper.

On low heat, simmer ghee, cilantro, coriander, lime zest, lime juice.

Serve tenderloin with onions, peppers, avocado salsa and sauce.
