Preheat oven to 250 degrees. Pop popcorn in an air popper according to directions. Place in a large bowl; set aside.
Melt butter in a sauce pan over medium heat. Stir in sugar, cinnamon, salt, and vanilla. Continue to cook until thickens. Pour over popcorn in a roasting pan.
Bake for 15 minutes. Cool completely before serving.
