Description: This is your traditional southern-style cornbread muffin. Quick and easy to make. You can also bake it in a cast iron skillet for that southern aunthenticity.
Ingredients:  Makes 12 servings (12 pieces)

In a medium bowl stir together flour, cornmeal, sugar, baking powder and salt; set aside.

In another bowl combine eggs, milk and melted butter

Add egg mixture all at once to flour mixture. Stir just until moistened.

Spoon batter into 12 greased 2 1/2 inch muffin cups, filling cups two-thirds full. Bake in a 400 degree F oven about 15 minutes or until lightly brown and a wooden toothpick inserted in centers comes out clean.
