Description: My recipe for Creole-style jambalaya. Shrimp was not particularly cost effective when making this batch, so it has been replaced with bacon.
Ingredients:  Makes 10 servings (10 cups)

Directions:  
Fry bacon over high heat in a large sauce pan. Remove bacon and chop, set aside.

Reduce heat to medium. Slice onions and bell peppers and add to bacon grease in sauce pan. Crush or mince garlic and add as well. Saute while slicing sausage and chicken.

Rub chicken with 1/2 tbsp creole seasoning, add to pan and brown. Add sausage, bacon, and crushed tomatoes. Stir in remaining 1 1/2 tbsp seasoning, broth, and rice, and reduce heat again. Simmer over low heat until rice is fully cooked.
