Ingredients:  Makes 6 servings

Directions:  
Whisk yolks & 1/3 cup sugar together until sugar dissolves.
Add cream & vanilla; whisk until well blended.
Strain & skim to remove bubbles.
Divide into 6 personal size baking cups (ramekins).
Arrange ramekins in 1.5" deep water bath in a deep baking pan.
Bake at 300ºF until custard is soft-set, about 55 minutes.
Leave ramekins in water bath until cool enough to touch.
Refrigerate ramekins at least 2 hours, up to 2 days.
Sprinkle each with 2 teaspoons sugar; caramelize under broiler.
Refrigerate at least 15 minutes, up to 2 days before serving.
