Rinse chickpeas under water, spread on paper towel and dry 15 minutes. Pat dry and discard loose skins.

Heat oven to 400F. In large bowl, whisk Parmesan cheese, olive oil, garlic powder, salt, pepper and cayenne. Add chickpeas and toss to coat.

Spread chickpeas on rimmed baking sheet. Roast in oven for 50-60 minutes, tossing twice, until dried and crispy. Cool.
