Cook onions, chopped celery, garlic, and cauliflower over medium low heat with a little liquid for 20 minutes until softened.

Add canned tomatoes with their juice and break up the whole tomatoes into chunks. Add broth, water, freshly ground black pepper and dried herbs and bring to a boil over high heat.

Add chopped summer squash and spinach in bite size pieces, then simmer 10 minutes or until all vegetables are tender.

Add basil.

Serve with parmesan cheese or use as the basis for other soup varieties.
