Description: Egg beaters, egg whites, & 1 egg. You can add sauteed vegetables, cheese, ham, etc. when you reheat them. I put fresh spinach in before reheating. if using veggies, I precook and add just before nuking. Revised 8/24/19

Directions:

Beat egg beaters, egg whites, and egg together.

Spray small omelet pan with canola spray and heat over medium heat.

Put 1 ladle of mixture into preheated pan and cook over medium heat, lifting edges to cook.

Turn over and cook on other side. Turn over again, fold in half and move to rack to cool and stack in container separated with wax paper.

Reheat in microwave for 45 seconds to 1 minute as needed.
