Directions:  
Saute' mushrooms and green onions in a non stick skillet with a little Pam
Mix egg whites, whole egg, half and half, and cheese in bowl and add to skillet with mushrooms and onions.

I mix for 3 days which would be 9 Tbsp egg white and 1 whole egg, 3 Tbsp half & half and put in small individual containers and add a Tbsp each of fat free and 2% cheddar cheese.

I also saute' about a pound of mushrooms for the entire week so only have to grab some to add to the green onions, which I keep in the freezer and they are already sliced/minced.

This makes this a really quick breakfast, and ready for the next two days without much fuss.

I usually make up enough for 4 days of breakfast and divide egg cheese mixture with half and half in individual small containers, I cut up a bunch of green onions and freeze, I also sautee' a whole container of mushrooms in a little Pam and keep in fridge for the week. This early preparation makes it quick and easy to make, also I just eat out of the skillet.
