On a broiler pan, place peppers, skin side up. Broil for 10 minutes. Place in a bowl, cover, and let stand for 15 minutes. Peel off skin.
Broil egg plant, skin side up, for 5 minutes. Place in a bowl, cover, and let stand for 15 minutes. Peel off skin. Cut peppers and eggplant into strips.
In a large bowl, combine oil and garlic. Add peppers, eggplant, parsley, oregano, salt, and pepper; toss well.
