Directions:  
In a large skillet, heat oil over a medium-high heat. Add peppers, eggplant, zucchini, and garlic for 8 minutes. Add the tomatoes, vinegar, basil, thyme, sugar, salt, and pepper; cook for 4 minutes. Cover and chill completely before serving. Sere with baguette or pita chips.
