Preheat broiler. Place egg plant slices on a baking sheet coated with cooking spray; broil 3 minutes on each side.
Preheat oven to 375 degrees.
In a large skillet, heat butter oven medium heat. Add onions, seasoning, salt, garlic, and mushroom; cook 7 minutes.
Place half of mushroom mix in the bottom of a baking dish coated with cooking spray. Layer half of the eggplant slices on top. Season with pepper. Top with 1/2 cup of tomato sauce and 1/3 cup mozzarella cheese. Repeat layering with remaining mushrooms, eggplant, and cheese. Top with Parmesan cheese. Bake for 8 minutes. Let stand 10 minutes before serving.
