Slice eggplant into 1-inch pieces. Season with salt. Cover and let stand 20 minutes.

Rinse slices in cold water; dry. In a saucepan, heat 1/2 tablespoon of oil over medium heat. Add tomatoes, garlic, basil, oregano, sugar, and crushed red pepper flakes. Reduce heat and simmer; for 40 minutes.

Season eggplant with salt and pepper. In a large skillet, heat remaining oil. Brown eggplant, a quarter at a time. (Add oil as needed.) Place slices on a serving platter, cover with tomato sauce, and top with Parmesan cheese.
