Ingredients:  Makes 8 servings (16 cups)

Directions:

Saute onion in olive oil until softened. Add ground turkey and seasoning packet - cook through.

Add can of beans and can of corn, stir together and heat through.

Cover bottom of 13x9 pan with enchilada sauce (approx 1 cup). Lay 6 corn tortillas down into the bottom of the pan.

Layer 1/2 meat mixture and 1/2 cheese. Repeat with remaining 6 tortillas and remaining meat and remaining cheese.

Cook at 375 for 40 min.
Top with sour cream and/or guacamole if desired
